Bolero is one of the oldest Western restaurant in Taiwan. In 1937, during the Japanese colonial age, a young Taiwanese, Mr. Liao, decided to start his own restaurant after working and understudying in a Western restaurant owned by the Japanese for a period of time.
Mr. Liao is also an art lover. He has supported arts such as some Taiwanese painters' works. So it is not difficult to guess why he would choose to use Maruice Ravel's one- piece movement orchestra music 'Bolero' as the name for his restaurant. Decades ago, when there weren't many other choices, Bolero was once a romantic place for matchmakers to introduce man and women to each other. Today, with its old-fashioned interior and new dishes, Bolero is still a place worth going.
